Depending on the provider, sim cards may have limited possibilities for storing contact info.

My sim will only store 1 phone number and one mail address per contact, while some of my contacts on the Desire have 3 phone numbers, a fax number, 2 or 3 mail adresses, their birthday and both home and work addresses entered.  Needless to say, that much info won't fit on any sim.

So if your iphone contacts are anywhere near as complete, I'd suggest some other way of entering them.  You might want to enter them manually, so you get a feel for how the contacts section of the Desire works.
Then again, that may only be interesting if you only have 20 or so contacts to enter.  If there's hunderds of them, you'll be busy all week.
