A SIM is by design not able to store enough information about each contact.  There's a limited number of characters that can be stored for each contact, so basically you can only give it a short name (up to 14 characters if I'm not mistaken), one phone number and one email address.

New SIMs have 128kb instead of the usual 64, but that extra space is usually taken by operator-specific tools.  On my own SIMs for instance these tools are a top-up option and a special app that allows you to recharge your prepaid card via bank transfer.  Kinda weird because I have a contract instead of a prepaid.

As for what kind of contact to use, I generally prefer to use google contacts instead of phone contacts.    The reason for this is that Google contacts are automatically backed up to your gmail account, which means that they can automatically be restored to any phone you set up with your gmail account.  That kinda limits you to Android phones only, but I see no real reason to switch to another kind of OS.
